CHIPOTLE  PINEAPPLE PANEER  SKEWERS

INGREDIENTS :-

  • 1 package Nanak Paneer, cubed
  • ½ package prepeeled pineapple, cubed

Marinade

  • 3 - 5 chipotle in adobo sauce (adjust based on your spice preference)
  • 2 cloves of garlic
  • 1 tablespoon oil
  • 1 tablespoon maple syrup
  • Juice of half a lime
  • 3 + 2 tablespoon tablespoons vegan mayo salt

METHOD TO PREPARE :-

If using wooden skewers soak the skewers in water for 10 minutes. Otherwise it will burn on the barbecue.

Blend all the marinade ingredients to a smooth thick paste

Add the paneer and pineapple to a bowl, along with all the marinade. Tosss and coat the til both are well coated. Let it marinate for 15 minutes or upto 2 hours.

Arrange the marinated pineapple and  paneer on a skewer (alternating between the 2). Reserve the remaining marinade for dipping sauce.

Grill the skewers on a barbecue or on griddle pan, until you see char marks.

Garnish with chopped cillsntro and serve with the remaining marinade as dipping sauce.
