Verka ghee (clarified butter) is prepared by melting and simmering butter until all water evaporates and the milk fats remain to 99.8 % minimum. It has a sweet, nutty flavour and is the cooking medium choice in Indian cuisines. It can be used in place of butter when sauteing or browning. Ghee keeps for months without refrigeration as long as you don’t allow moisture to get in.
